Back in the 1960s my mother found out she had diabetes. The first thing her doctor said was that she would have to change her diet and learn how to eat like a diabetic. After the shock and tears passed, my mother started stocking up on cookbooks for diabetics. The kitchen was suddenly filled with long lists of foods with nutrition information on caloric content and proportions she was allowed to eat. She started reading the labels on food packages (this was before nutrition content listings) for weights and measurements. On the counter we had a new gadget called a food scale and we learned what a bread exchange meant and what a fruit exchange was. Our lives were changed forever.
Just a personal thought to commemorate the day.
